Radauteana chicken soup, a delight on autumn days

Radaute Chicken Soup is simple to make, yet very tasty. It is a delight on cool autumn days, accompanied by a hot pepper and freshly baked bread. Here’s how easy it is to prepare.

Ingredients for Radauteana chicken soup

  • 500 g of chicken (thighs or breast)
  • 2 potatoes
  • 3 carrots
  • 2 parsnip roots and / or parsley
  • 2 peppers
  • 1 large onion
  • 1/3 of celery root
  • 3 egg yolks
  • 400 grams of Greek yogurt with 10% fat
  • 5-6 tablespoons of sour cream
  • vinegar, to taste
  • 5-6 cloves of garlic
  • 1 bunch of dill
  • salt

How to make Radauteana chicken soup

Clean the vegetables and wash them well. She also washes the leather chest.

In a saucepan to which you have added three liters of water, add the chicken and the vegetables and cook them until they are well penetrated and the chicken will easily detach from the bones. Add salt to taste.

When they are cooked, remove the vegetables and meat and let them cool a bit, then cut them into small pieces. Then add the meat and vegetables to the soup again and boil everything over low heat.

Meanwhile, in a bowl, mix the yogurt very well with the egg yolks, until they are homogenized. Then add a few tablespoons of soup, until the composition becomes liquid, then pour it over the soup and mix well.

Add vinegar to taste and season with salt if necessary. For taste, you can add a little freshly ground pepper.

Mash the garlic very well, in order to obtain a fine paste. Add it to the soup and boil it. Then turn off the heat and add finely chopped dill.

Serve the Radauteana chicken soup hot, along with the fresh homemade bread.
