Finally, to dry the food, you need 300 milliliters of full-fat yogurt or frothed milk, three cloves of garlic and finely chopped dill or parsley. How to cook a delicious and aromatic soup
If you have opted for the spare ribs, they will be separated, so the meat between them will be diced. Next, you will cut the onion and garlic. The carrot will be sliced and the courgettes and potatoes will be diced. In a saucepan, put the smoked meat together with the onion, garlic, carrot and two tablespoons of oil. They should be left on low heat for 4 minutes, until you notice that the vegetables soften. Next, add the potatoes to the pot, which you leave for 2 minutes. Two liters of warm water will be poured over the vegetables and meat and the soup will be seasoned to taste with salt and pepper. Boil them for 15 minutes, then check the potatoes. If you notice they’re almost ready, it’s time to put in the pumpkins and milk. Boil everything for 5-7 minutes, then check if the courgettes are ready. If they are ready, you will turn off the heat and start chopping the vegetables. This will be added to a bowl along with the yogurt or frothed milk and the crushed garlic cloves. Mix everything well and add a pinch of salt. Pour 3-4 ladles of soup on the composition obtained to bring the yogurt to room temperature, then pour it all into the pot. This can be served with a little vinegar, added directly to the dish.
