Onion soup with leeks, ingredients for 3 servings

You need:

  • 6 suitable onions
  • 50 g of butter
  • 800 ml of chicken concentrate
  • 1 bunch of assorted vegetables (parsley, celery, thyme)
  • 15 ml of wine vinegar
  • 150 ml of dry white wine (optional)
  • 150 g of soft dough for ready-made savory / or savory pies
  • 30 g of grated Parmesan cheese
  • 1 egg

Method of preparation

Fry the onion in the butter until golden brown, add the chicken concentrate, the chopped vegetables, ATTENTION, a pinch of salt and pepper. Boil everything for 30 minutes. Remove the vegetables after they are cooked and have left their taste and aromas and add the vinegar.

For the crusts: beat the egg with 1 tablespoon of milk and salt. Roll out the dough into a 3 mm sheet, brush with egg and roll up. Cut the slices and bake in the oven for 20 min., At the right heat.

Serve the soup hot with the salt and the grated Parmesan on top.
