Minestrone – Ingredients
- 30 ml of olive oil
- 1 white onion
- 1 red onion
- 1 stalk of celery
- 1/2 thread of leek
- 2 medium-sized carrots
- 2-3 cloves of garlic
- 1 bell pepper, red
- 1 bell pepper, green
- 1 green courgette
- 100 gr of frozen peas
- 400 gr of chopped tomatoes
- 2.5 l of water
- 100 gr of short pasta
- Salt and pepper to taste
- 1 sprig of rosemary
- a few basil leaves
- a few leaves of green parsley
- the juice of one lemon.
Minestrone Recipe – Method of preparation
We recommend that you start by preparing the ingredients with which the soup is made. Clean the vegetables, wash them, cut them into large pieces and put them in very cold water. Leave them in cold water until you add them to the soup. Cold water will keep the vegetables crisper, even after boiling.
Boil a pot with 2.5 liters of water. When the water comes to a boil, add a teaspoon of salt. Stir in the water until the salt is diluted.
Put the oil in a saucepan on the stove. Heat and add, first the onions, garlic, celery and carrots, cut into cubes.
