Healthy recipe for spring: watercress soup

Watercress soup (also known as buttermilk) is extremely tasty and prepares very quickly, without much effort.


Ingredients for watercress soup

  • 2 tablespoons of vegetable oil
  • 1 potato
  • 1 onion
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground black pepper
  • 2 1/2 cups of chicken broth
  • 2 1/2 cups of milk
  • 700 g of tender cress leaves
  • 1/4 cup heavy liquid cream
  • 1/2 cup cress leaves (for garnish)


How to make watercress soup

Heat the oil to medium temperature in a large saucepan. Add the peeled and diced potato and the chopped onion, season with salt and pepper and simmer for 5 minutes. Add the chicken soup and milk and bring the mixture to a boil, then let it simmer at a low temperature for 10 minutes. Add the 700g of watercress and boil the soup for 5 minutes. Allow to cool a little and blend with the help of the blender. Reheat again, put it in individual bowls and decorate each with a little liquid cream and a few fresh cress leaves.


How to serve watercress soup

Watercress soup is served hot. It can be eaten, like any cream soup, with crispy croutons or thin strips of browned bacon.
