In the kitchen of the Super Neatza matinee, the chefs on duty try their hand at culinary ideas, each more interesting than the other, to the delight of the matinees, but also to be used as inspiration for home cooks, in front of the screens. In the 7 July 2022 edition of the show, chef Radu Darie, the chef on duty, cooked many culinary recipes from simple appetizers, to interesting appetizers, delicious desserts, but also a main course consisting of a recipe of chicken livers in sauce of tomato with cous cous side dish.

It is a simple recipe that reminds us of childhood. Tender livers in milk and pampered in a tomato sauce with a little onion and garlic, they were very good enjoyed with polenta, as mothers or grandmothers prepared them. Radu Darie did not prepare the polenta this time, but prepared a delicious and very nutritious couscous side dish.

Chicken thighs in tomato sauce with couscous side dish – Ingredients

  • 1 kg of chicken liver
  • 1 liter of milk
  • 2-3 tablespoons of oil
  • 1 onion
  • 2-3 cloves of garlic
  • 250 ml of tomato juice
  • salt and pepper
  • 400 gr of couscous
  • 1200 ml of vegetable soup

Recipe for chicken livers in tomato sauce with couscous topping – Method of preparation

First, clean the livers from the peel and dip them in a bowl of milk. milk helps to eliminate toxins, to clot the blood and also to soften the livers. Leave the livers in the milk for at least 30 minutes. Then drain the chicken livers well and pat them with absorbent paper.

Heat the oil in a large pan. Peel the onion and garlic, chop finely and add them to the pan. Stir a little to prevent burning, then add the chicken livers. Quickly brown the chicken legs over high heat, turning them from side to side and tossing them gently in the pan with the onion and garlic. When they are golden brown, add the tomato juice and reduce the intensity of the heat. If necessary, add a little hot water.

Season the chicken legs in tomato sauce with salt and pepper to taste. Optionally, you can also add your favorite spices.

To prepare the couscous, heat the vegetable soup and boil it. Put the couscous in a large bowl and pour the hot vegetable soup over it. Cover the bowl with a lid and let the couscous hydrate until it has absorbed all the soup.

The chicken livers and the couscous garnish are decorated with green parsley, for added freshness.
