Since beetroot is very low in calories and does not contain cholesterol, it is a very important food for the proper functioning of the body. Furthermore, beetroot is rich in micronutrients (vitamins and minerals), such as folic acid and potassium, but also in biologically active substances (antioxidants).

Beetroot soup, ingredients:

4 servings – 95 calories / serving

  • 1 tablespoon of oil
  • 2 medium red beets, boiled, diced
  • 1 apple, peeled and cored, diced
  • 1 medium potato, peeled and grated
  • 450 ml of chicken broth
  • 150 ml of apple juice
  • 4 tablespoons of heavy cream (optional)

Method of preparation:

Heat the oil in a saucepan. Add the beets and apples. Cover with a lid and simmer for 2-3 min.
Add the potatoes and soup, bring to the boil, cover and simmer for 10 min.
Wait for it to cool slightly. Mix well until you get a cream. Add the apple juice and season. Depending on your preferences, it can be served cold or warm with a spoonful of cream.
